THE CIRCUS IS IN

Roll up, roll up for a new fun-filled eatery in southern Bali.

“Human cannonball” reads the business card of Josh Herdman, the Australian co-owner of Sea Circus, a festive new eatery on Bali’s southern shores. Antique circus-themed toys and games entertain diners inside this whitewashed, pitched-roof bungalow with multicoloured glass louvres to suggest a real circus tent. “Plate spinners” deliver plates for sharing: organic beer-battered fish and chips, plus salt and pepper squid with sweet soy and coriander. Aussie chef Stuart Marsden walked the tightropes at Cecconi’s Cantina, Longrain and Blake’s before taking his act to Seminyak Beach, where his light and healthy mains, such as grilled mahi mahi topped with capsicum and roasted walnut salsa, leave room for star performers such as the hot churros with dark chocolate dipping sauce.
